Bauhaus Flat Iron Steak Recipe

Flat Iron

Single Portion 120g
double 240g.

Clean excess sinuate from Flatiron Steak.

Vac Pac with Thyme, Rosemary and Garlic Olive oil, Steam at 54C for 40 mins.

Add into smoking hot pan with oil and sear till nice crust is formed all around. Best served at Medium Temperature 57-63C. season with salt and pepper before serving.

Herb & Garlic Olive Oil

500 ml Extra Virgin Olive oil
6x Garlic Cloves
1 bunch Thyme
1 bunch Rosemary

Vac Olive Oil with Herbs and Garlic. Sous Vide for 1 Hour at 68C. Let infuse for 1 Day.

Smoked Almond Puree

200g Almonds
2L Milk
100ml Smoke extract
Salt

Boil Milk and Almonds and Salt till soft. Blitz on Veroma in Thermomix with Smoke Extract till smooth cream texture (approx. 30mins)
For extra smooth texture put in Paco Jet container freeze over night. Add container to Paco Jet when frozen and blitz. Transfer to pot and heat up.

Pickled Green Almonds

Green Almonds
Pickle Stock
Salt

Boil Pickle Stock and pour over Almonds. Let Cool and put in Jar.
Slice thin before serving.

Pickle stock

200ml White Wine Vinegar
500ml White wine
80g salt
300g Honey
½ stick cinnamon
3 cloves
20 Allspice whole

Add Honey to pot. On medium heat Caramelize the Honey till it darkens in colour to a nice golden brown. Add spices, white wine Vinegar and white wine. Boil for 15 minutes.

 

Mashed Potato

10-20 peeled Fingerling Potato
1/2lbs unsalted Butter
200ml cream
Salt
Nutmeg

In a pot add peeled potato, cold water and salt. Bring to a boil and cook potato till soft. In a separate pot add butter, cream, salt and nutmeg (finely microplained) bring to a boil and set aside. Once potato are cooked add to ricer. Add cream and butter liquid to potato and season to taste. Add mashed potato into a piping bag and cool in fridge.

Crispy Mashed Spring Roll

Mashed Potato
Wonton Wrapper
Flour
water

Lay wonton wrapper diamond shaped out on table. Pipe in mashed potato. Roll and fold sides in. glue with flour and water slurry. Add oil to a pan or deep fryer, and crisp up the spring rolls.

Broccolini

1 bunch Broccolini
Sherry Vinegar
Butter
salt

Blanch broccolini in salted water. Ice down. Add oil to a pan, let it get really hot almost smoking. Add brocclini and sear hard one side and flip. Add salt and sherry vinegar and make butter glaze.

Potato Crumbs

Peel potato and blitz with water in thermomix or but small by hand with a knife. You want it to be crumb size. Rinse off in water to wash off excess starch and dry by patting down with towel or paper napkins. In deep fryer or in a pan, add oil and fry till golden brown and crispy.
