We celebrate that we craft wine in a region where vintage variation truly matters. What may unsettle those seeking uniformity is precisely what defines our passion. Rather than chasing sameness, we embrace the character each season brings and look forward to what nature gives us to work with each year. It is the imprint of every vintage on the finished wine that inspires us to cellar our favourites, begin verticals, and follow their evolution — sharing and debating their merits with friends along the way.

LaStellina is crafted using both the press and saignée (bleeding) methods, bringing depth and nuance to this Rosato of personality and elegance. It is dry, yet never austere, striking a graceful balance that feels both refreshing and composed. Cabernet Franc lends lifted spice and gentle herbal notes, while Merlot layers in a mélange of red and dark fruit. From a beautifully balanced growing season, the 2025 LaStellina is already drinking beautifully. With its modest alcohol and vibrant character, it is equally suited to relaxed patio sipping or poolside afternoons, and just as confident at the lunch, brunch, or dinner table.

  • Di Carne
    The slightly off dry and highly aromatic qualities of this wine complement dishes that carry spice or piquant flavours. Hearty Indian or Thai curries would be a great choice! This wine will also work beautifully with strong aged cheeses.

    Vegetariano / Vegano
    A variety of vegetarian Indian and Thai dishes will work incredibly. Pairing this with lentil & bean chilli on a brisk fall day can work wonders.

  • Tasting Note This is a blend of cabernet franc and merlot made in a very approachable smooth and almost graceful style, yet without any notable sweetness. The aromas show typical rose red fruits like strawberry and redcurrant with the cabernet franc infusing dried herbs. It is medium bodied with well-managed 12.5% alcohol, modest acidity and, again, no perceptible sweetness. The finish is even; the length is excellent. It’s a fine patio-sipping style that should work with all kinds of flavourful and spicy Mediterranean and Asian alfresco meals.
